Vegetable oils were unstable and easily go rancid/oxidate. 16:03 The hardening process to make margarine or Crisco, called hydrogenation, produces trans fats. 16:46 When unstable oils are heated, even at room temperature, they oxidize and degrade into hundreds of oxidized products. 17:46 Polyunsaturated vegetable oils show higher rates of death from cancer. 19:40 Americans used to eat 3 to 4 times more red meat than we do today. 24:02 The advice to eat mainly fruits, vegetables and grains is not supported by all the science. 25:27 The nutrients that we need, in their most bioavailable form, come from animal foods. 26:43 The most nutrient dense food on the planet is probably liver. Our ancestors ate organ meats. When predators kill prey, they go for the organs first. 20:38 All foods are a combination of different kinds of fats. 32:54 For women, a low fat diet has no meaningful effect upon weight loss, preventing type 2 diabetes, preventing heart disease or preventing any kind of cancer. 34:05 Low fat diets may increase a woman’s risk of heart disease. Her levels of HDL (good) cholesterol fall and often triglyceride levels rise. 35:07 Many studies become “silent studies”. Since the results do not fit the narrative, they are forgotten and disappear from the literature. 36:27 Over 70 clinical trials have been done on a low carb diet, but researchers cannot get their studies published. 39:15 Researchers in the field of nutrition science stay within the realm of acceptable discourse in their field. This is why the new science about carbohydrate restriction came from people not in the field of nutrition. 43:08 60% of study diabetics on the ketogenic diet were able to reverse their diabetes. In the nutrition field, it is considered impossible. 47:16 Meat is a healthy food that contains vitamins and minerals that you cannot find elsewhere. 51:10 Eat more saturated fat to raise your HDL. Triglycerides are driven by your carbohydrate intake. 56:26 The Mediterranean diet was not scientific. It was a commercial product developed the European Olive Oil Association. 01:01:35 Epidemiology shows association, but not causation. Where their findings are tested in randomized control clinical trials, the Harvard School of Health correlation studies are correct only 0 to 20% of the time. 01:03:20 The dietary guidelines for Americans are not based in evidence. They are the most important nutrition policy in the world. 01:04:45 How do we get dietary guidelines based on rigorous evidence from clinical trials? The blatant promotion of plant fats in favour of butter (other types of animal fats aren't even mentioned) was rather staggering and they had the nerve to write "Research overwhelmingly shows a correlation between plant oils and reduction in cardiovascular disease". These are the same people who used to recommend 5-8 slices of bread per day, so... Not exactly reliable. 20 High Intensity Health Reply High Intensity Health · 1 reply Susie Hulcher Susie Hulcher 1 year ago Nina is the real deal...smart, transparent, passionate and researched to the max! 1 Reply Akane Cortich Akane Cortich 4 years ago (edited) In the spirit of this reevaluation of health and medical truth I did previously mention that interviewing a cardiologist on K2 would be interesting - but now think that the most interesting interview would be with Dr Tom Cowan, who has been around for a while, done decades research on what causes heart attacks - and categorically states that the thrombosis mechanism for heart attack causation is totally wrong - he presents data to back up his claims, and provides a more logical explanation that matches up with what we know about the body and muscle. He also explains elsewhere why the heart is Not a pump - and again provides pretty good rationale for that. I did listen one of his lectures - and so people know what he is talking about I copy here a summary I did elsewhere - hopefully I have been faithful to his assertions. Summary. Heart attack is via poor oxygen supply to the heart muscle (due to long term damaged to/or constricted capillaries), the heart changes its manner function to compensate (the same as our other muscles do) which then creates lactic acidosis that isn't being cleared (because of poor capillary perfusion), thus causing pain and cell death - ie heart attack. The thrombosis that is found in arteries after a heart attack is an artifact of the attack, not the cause, a result of the trauma in the heart muscle - and as stated the material in these 'clots' are mostly material from cell death. The medicine digitalis has zero effect on blood clots/thrombosis but is statistically very successful in saving a person from their heart attack - and the action of digitalis happens to be to help clear lactic acidosis! From patients who have died from heart attack it was shown that the amount of thrombosis in the arteries was related to how long it took them to die from the heart attack. If they died quickly little thrombosis was found, if it were some hours, there was much more thrombosis (this is the opposite of what you would expect if thrombosis was the cause). It indicates that the heart attack by product was to cause blood clots 'down stream' - thus the death of heart muscles nothing to do with blood clots / thrombosis. And as was known prior to 1960, thrombosis was not the cause of heart attacks. The precursor to heart attacks then is the continual damage to capillaries in the body, especially those that feed to the heart muscle. Diabetics with uncontrolled blood sugar/insulin are known to have neuropathies (due to extensive damage to capillaries feeding nerves), and thus the same damage would be occurring in the heart muscle. And this is then why diabetics are at high risk of heart disease/heart attack. So for the general community poor diet with sugars also causes damage to capillaries, and poor Vitamin D3 and K2 means extensive calcification throughout the body, including vessels and capillaries. This is why Connery Artery Calcification (CAC score) is a very good predictor of future hear attack - it is representative of damage throughout the body - calcification comes from poor diet and inflammation, likewise plaque. Carbohydrates and sugars being the prominent cause of these things. And it thus meaningful that those who go on long term ketogenic diets/lifestyle dramatically reduce their CAC score and cardiac risk., ie limit long term capillary damage. It has been assumed After the 1960s that cholesterol-artery plaque was the risk factor and then the cause of heart attack. But postmortem examination tends to not support this theory, with there being little instance of full blockage, or even minimal blockage in many cases - and there is now good reason to suspect that blockages occur After the attack due to damaged/dead heart material flowing down stream. THUS those wanting to avoid heart attack in the future now have a very clear target - and that target is to protect the capillaries of the body (those very fine blood vessels that feed muscle). And the only way to do this is manage inflammation as a part of lifestyle - which means carefully control blood sugar levels in your eating habits. Reducing the number and level of BS spikes to a minimum. Unfortunately this means cutting back drastically on carbohydrates and sugars. AND also reducing the level of calcification in the body due to poor diet (lack of vitamin D3 and K2) which will for most mean D3 and K2 supplement. (but take heart K2 has been show to protect against prostate cancer). You wont be surprised then that statins (meant to reduce LDL cholesterol) have statistically very little effect on longevity. Basically of very little use, and have side effects. What you should take home from 'poor' cholesterol results is that your lifestyle is harmful to those forgotten by highly critical capillaries. 11 Reply 1 reply mecgmecg1 mecgmecg1 4 years ago MUCH appreciation to Nina!!! In the summer they have vegetables and fruits. They raise chickens and ducks for eggs and meat. They also raised pigs to make sausages that would get them through the winter. They had a cow for milk and to make cheese which would also last them through the winter. They grew wheat and from that they made bread and pasta which they had year-round. Wheat was cheap and could be held year-round so that was at least half of what they ate. They lived in the mountains so they had very little access to doctors, certainly no nutritional advice. But what they all had was diabetes but even so they managed to live long lives. My grandmother had both of her legs amputated still managed to live to 93 with all her faculties. I was diagnosed prediabetic at age 66. Went keto for a year and still doing it moderately. Meaning very low carb most of the time. I still bake bread once a month and have a slice or two. I still make homemade pasta and have a small bowl once or twice a month. Eliminated all sugar. My age A1c is normal 5.4. My fasting blood glucose usually in the low 100s. Since I’m genetically predisposed to diabetes I don’t believe that my blood glucose will ever be constantly in the low 90s. But I lost 25 pounds and I’ve been working out three days a week in the gym. I also lost 5 inches off my waist and now wear the same size clothes as I did in my mid20s. On holidays I still have a pastry or ice cream but never In excess. I treat carbs and sugar as a treat that I can have on occasion but that’s it. My feeling is if I live to their age I’ll be doing it a lot healthier and stronger. If not I’ll be the fittest corpse in the cemetery. Reply La Mariana La Mariana 4 years ago Thank you for this guys. Then the cost of meat, especially beef and lamb, increased - while starchy foods were cheaper. Mike is right - what the chicken eats makes a huge difference in the nutrient content of the chicken (and the eggs they lay). This should be obvious... but Big Chicken (sorry, couldn't resist) does not care about nutrient content; they sell chicken by the pound. Of course this is true of all whole foods - so remember that the next time someone make an issue over the higher prices for organic, free-range, pastured, grassfed foods. Cheapest is not always the best deal. Commercial eggs are produced by different chickens. The industrial /commercial meat chickens are unable to live beyond a few months of age, though most will die before then. This is due to a 'double breast' gene that makes the white breast meat huge, but their cardiovascular capacity is not proportionally larger. They are usually harvested at 8-10 weeks of age. Along with the diet (Which is typically carefully formulated, yes for lowest input that still yields the fastest gains) that lacks bugs and fresh greens, the young age is why these chickens are almost flavorless compared to 'the real thing'. (Though some CAFO raised chicken tastes distinctly of chicken manure.) Some small farmers keep them a little longer, but growers are warned not to let them flap their wings, because tat will cause bruising in the breastmeat. Some people criticize Joel Salatins pasture pens for the broiler chickens because there are no perches, but these birds cannot fly up to a perch, and are likely to suffer or die if they try. Salatin says the idea of heritage meat chickens is wonderful, but the chickens look different from what customers are used to (smaller breast, more dark meat, not as chunky) AND the heritage breeds cost more to raise... and take longer to get to harvest size. Keep these things in mind next time you are shopping for food. 4 Reply Wild Rose 🌸 Wild Rose 🌸 4 years ago Wow! She's great. Thanks for the education :-) 2 Reply Lycantis Lycantis 4 years ago Very great interview. A lot of what's in her book is also in mine and on my site. I have more details on the reason muscle meats are not so great versus organs. One addition I might add is that pigs do not actually convert junk to anything healthful or useful. They convert it to fat just like humans do. If you want to fatten a pig, you feed him cereal and skim milk. This was confirmed in 1910 by swine farmers. Chickens have a mostly carnivorous but lower-fat need because they eat small rodents (rabbits, mice, squirrels, etc), insects, and some plants and whole, unground seeds. The seeds go through their system without digesting and make up anywhere from 2%-10% of their diet and seem to be there with the same purpose as rocks (little hard things to grind their food in the gizzard) then are pooped out in a pile of fresh fertilizer. All of these foods are actually lower fat than things like deer and bison. Animals like humans, felines, and wolves thrive on the fatty animal flesh and equally, have a large gall bladder--something needed by carnivores, smaller in lower-fat omnivores, and non-functional OR nonexistent in herbivores. I went vegetarian for only two years, but because of disorders and already being sensitive, it almost killed me and I suffered severe deficiencies of things I have a hard time getting in the first place. Now I find out I have a disorder where I am completely intolerant of carbohydrate so I choose to live a Carnivore lifestyle with herbs here and there but mainly I just eat organ meats and fewer muscle meats, lots of fat, egg yolks without the white (allergic to the white but not yolk because of some specific lectins not identified but I know those cause allergies), and I drink water or whole milk or even pure cream. My brain fog and early-onset dementia reversed and only the peripheral neuropathy flares once in a while when I do eat any plants. I lost somewhere between 130-150 lbs (I hadn't weighed myself prior, but my doctor's visit I was 256 lbs, and I was heavier at the time I dropped carbs). I reversed several inflammatory and diabetic markers. My depression has been getting better over time. My blood panels are fantastic. When I found the information, I was livid;I had been following the recommendations to a T but I was wrong, I was at fault. But here, the science says the opposite, and what I was following was corporate propaganda, religious propaganda (Ellen White, Sylvester Graham, John Harvey Kellogg--religious nuts pushing vegetarian, high-fiber diet but without substantiated evidence to prove health), and pushing a diet which is fed to animals to fatten them up. This, most of all, is what prompted me to write about it and include the science. Reply Marco Marco 4 years ago (edited) It is already unbelievable how they sold to the Americans this weird idea that Mediterranean diet is devoid of meat. But it is so incredible how this myth turned around and got here in Italy too were old people on the mountain villages still eat a Mediterranean diet made of a lot of meat, fish and cheese..and of course olive oil and many herbs and some legumes and bread as side dish. Wheat was common only after WW2. But if you ask anybody what the Med. diet is, they think pasta and pizza and the nutritionists add fresh fruit and vegetables (what we had not in such an industrial adbundance as today) to the grains. Fortunally fish is still considered important even by the mainstream but the war against meat is very on and common are the stupid tips such as red meat once a week, to eat poultry instead and so on. 2 Reply Jeremy S. The problem is people eat the wrong kinds of foods. More beans, vegetables, fruits, unrefined grains, nuts. If you keep dairy in the diet in any form the IGF1 will promote weight gain - moreso with low fat because the protein/fat ratio is higher. Not to mention the quantity of sugar added into yoghurt these days but that's another issue. https://www.youtube.com/watch?v=1R1E3CqZeg8 4 Reply S. Bryan Reinholdt JR S. Nina Teicholz, author of The Big Fat Surprise: Why Butter, Meat and Cheese Belong in a Healthy Diet, and the Nutrition Coalition, backed by John and Laura Arnold, billionaires from Texas whose fortunes are tied back to Enron, have joined in as major power players in the fight, according to an in-depth report from Politico. According to Politico, before the Nutrition Coalition was officially formed, Teicholz attended a meeting with representatives for ConAgra, the Grocery Manufacturers Association, and the National Cattlemen’s Beef Association, among others, to talk about whether criticizing the guidelines from the scientific standpoint would “create new opportunities” for rewriting the recommendations.” Following her op-eds in the The New York Times and Wall Street Journal about why “Americans need more meat, dairy, and eggs in their diets, Teicholz also recently published a feature report in BMJ, formerly known as the British Medical Journal, directly questioning the scientific approach behind this year’s USDA/HHS advisory report. The BMJ story was underwritten by the Arnolds, who “are spending an initial $200,000 to communicate [the scientific] critique” of the guidelines submitted by the government’s advisory panel.” For this purpose “They have funded The Nutrition Coalition.” In the BMJ article Teicholz admits to receiving money... “for presenting my research findings presented in the book to a variety of groups related to the medical, restaurant, financial, meat, and dairy industries.” “Nina Teicholz serves on the Nutrition Coalition’s governing board, comprised of scientists who do research funded by food companies and have received industry funding over the years for their research and work from Dannon Institute, Kraft General Foods, the National Dairy Council, a non-profit supported by the dairy checkoff program, The Beef Checkoff, Dairy Research Institute, Egg Nutrition Center, Global Dairy Platform, Hillshire Brands, and the National Pork Board.” The board also includes “a former undersecretary for food safety at USDA who has her own consulting firm with clients apparently including the National Restaurant Association and the National Cattlemen’s Beef Association.” https://www.bmj.com/content/351/bmj.h4962 https://www.politico.com/story/2015/10/the-money-behind-the-fight-over-healthy-eating-214517 https://thehill.com/blogs/congress-blog/healthcare/257353-coalition-is-full-of-baloney-on-nutrition-guidelines https://www.foodpolitics.com/2015/10/the-bizarre-saga-of-the-2015-dietary-guidelines-continued/ https://www.theatlantic.com/business/archive/2015/10/meat-industry-lobbying-political-nutrition/412243/ Reply Paco Rodriguez Paco Rodriguez 4 years ago I'm completely shocked that there was 70 dumb unintelligent people that gave this video a thumbs down that's great video as always thank you for the free education 2 Reply 2 replies Christopher Wolf Christopher Wolf 2 years ago I swear you’re the best interviewer Reply Genki Dama Genki Dama 4 years ago What about POPs like Dioxins, PCBs and heavy metals? Now its full of junk food. but my parents who live in a tiny village and my grandparents grow and eat their own vegetables, have their own chickens and eggs, and eat lots of meat. in Easter we traditionally eat meat organs. i could never manage that. mainly the healthy Mediterranean diet is lots of vegetables, meat, olive oil, and fruit but not processed food. dah thats healthy. oh and back in the day you did not have bananas in the mediterrenean. the mediterrenean diet in a village means you have access to few fruits like a desert. its not like you go to a supermarket and you buy a ton of bananas. if you omit the fruits and have lots of meat veggies and olive oil its keto, if you add the fruit is something else. and of course as everyone is saying the wheat they were eating in the past was different from the processed wheat they are eating now. and I want to add another variable. back then they were walking miles per day. and they were going without food for hours. which is exercise and fasting. my father would be for hours working mainly with his body and come back home in the evening often to eat his first meal of the day. so we are talking about the basics applied in every traditional culture .cut out processed food, add some sustainable fasting , walk a lot, do some exercise, spend time in nature. eat with family and friends 1 Reply Neena Me Neena Me 4 years ago (edited) Mike The Framingham Study Nina talks about is at 12:02 .
