I am a nearly life-long type 1 diabetic (41 yrs diabetic and 53 yrs old) with nerve damage to my vagus nerve. I also have significant vision loss in my right eye. For 7 years, I have followed a combination of what Dr Gundry discussed in chapter 10 of the Plant Paradox, as well as Dr. Bernstein’s approach to keeping blood sugar low in his book diabetes solution. Dr. Bernstein advocates for higher Protein consumption and not a high focus on vegetables/plant foods. I am one of those people who cannot tolerate a ton of fiber or fat. Dr. Bernstein is a practicing and thriving endocrinologist in his 90s, who has been a type one diabetic since age 12. So given my situation, I eat more protein than Dr. Gundry recommends. With that being said, I also weight train 3 to 4 times a week, and I have been doing that for over 25 years. I feel like Dr. Gundry’s recommendations for animal protein is definitely on the low side. I have never heard Dr. Gundry mention type one diabetes or Gastroparesis. Dr. Bernstein discusses these issues constantly, so I don’t feel like I could ever be 100% on Dr. Gundry’s plan, even though I do my best and eat the majority of my food from his yes and no lists. At some point, we make decisions, based on the best available data, economics and difficulties in instituting a plan. Some changes I've made recently. I only buy organic pasture raised eggs, They taste unbelievable. Ditched peanut butter forever. Omg-6:Omg-3 ratio was 1700:1. I switched to sprouted bread. Don't really care for the taste. But, I can't have everything. I've cut back on store bought chicken. Liked the Okra and tudca ideas. I'll check them out. Rome wasn't built in a day. I quit diet soda seven years ago and haven't had a drop since. I've been a binge eater my whole life and from day one after taking lectins out of my diet I have had not one craving for junk or one "cheat" day. I don't want to cheat because I'm super satisfied with my food that I'm eating that do not have lectins. Gundry saved my life. Type 2 is gone. Feeling weak and tingly fingers are gone. My grandma sadly died too young in her early 80s she drove into an oncoming truck at dusk doing chores when the light sky plays tricks on your eyes,; my grandpa developed cancer from the chemicals he treated crops with. I can't imagine doing that as a sort of No. 1 priority, and I don't think its necessary for longevity. I think keeping your immune system in good nick is more important than being "musclebound".
