Lactose intolerance come from that “treated” milk. Raw milk contains the bacteria that breaks down the sugar in milk.

I drink plain kefir every day. It's very filling, so helps avoid over eating. Since the lactose is changed, it is said to be ok for lactose intolerance. I'm not intolerant, as I'm Nordic/German.

I have been finally paying attention to digestive health, and have grown a liking to Kombucha. Learned about Milk Kefir and first taste I couldn't believe how sour it was. I gave it a few more tries and it really leveled out in taste, so I am now enjoying consuming it. Looking forward to it's benefits!

The word Kefir is derived from the Arabic word خاثر ḵāṯir (Clotted/coagluted, clabbered).
Bedouins used to store milk inside bags made out of goat stomach, when they travel they used to have these bags on the camels so it will keep shaking all the time while traveling, the next day the milk will get Clotted, they call it Laban Kathir (Clotted/clabbered milk).

I am Persian, and use it for years. My wife makes it from Raw milk and that is the best kind. Pasteurization kills all the best quality of the milk.

I found that freezing milk then making kefir with that; made a "Cheesier" Kefir at home. Didn't thicken or go fizzy. I assume it broke down the fat in the milk. Much nicer.

Only one thing I would like to mention…
Majority of commercial brands you show in this video do not use Kefir grains to make Kefir!!! Instead they do use commercial starters made in lab 🧫, that makes completely different product!!! The difference is tremendously huge!!! Unfortunately, majority of people do not know that!!!

I have water Kefir, and make it weekly. My favorite is fermented with water, cane sugar, oranges or apples. My husband has much less ibs issues since drinking it

NOTE: the kefir was mixed in a blender. This is a no-no (metal blades)! So blend fruit with small amount of organic fruit juice then combine with wooden or silicone paddle

These grains are so unique I'm thinking that the manna from heaven showered down upon Moses' tribe was at one time put into their milk. Modern science can't even create these grains from scratch ! No one can !

I am a long time kefir lover and I always share it with my grandson who also loves it. But somebody told me about alcohol levels in kefir, from 0 to 4 g and now I am not sure that kefir is safe for kids. What do you think.

I strain the kefir through a cheese cloth and use the "cheese" to make cheesecake. Philadelphia Cream Cheese: 35% fat. Kefir Cheese (made with whole milk) 8% fat. And it's delicious.

Everything needs to be in moderation. Remember SIBO Your stomach acid is supposed to kill bacteria before it gets into the small intestine, that's because bacteria for the most part do not belong there. This good bacteria belongs in the large intestine not competing with your food. The hope is, that if your stomach acid is good, maybe some of these good bacteria will survive the acid gauntlet of your stomach and small intestine and actually make it to your large intestine. But if you have acid reflux, you may end up with SIBO, "small intestine bacteria overgrowth" If that's the case try drinking some apple cider vinegar. Acid reflux is normally caused by low stomach acid not closing the esophagus, and that muscle needs high acidity to close. (Don't take an antiacid, that will just make it worse)! I drink 2 tablespoons twice a day with an 8-ounce glass of water. Get ACV with the "mothers".

Using kefir in bread or pizza dough is a waste of kefir. The high oven temperatures would kill the beneficial bacteria. Sourdough bread is not any healthier than commercial yeast bread as the yeast is killed in the oven.

I could make my kefir from store bought kefir.. Just warmed a glass of whole milk add 2 spoon of store bought kefir. Keep the glass in a warm place. If the weather is cold then place it in a oven after heating it mildly just so that its warm enough and switching it off

Need to find some seeds , to start the cultures .
I make my own yoghurt , useing either a base from a packet , with the addition of a probiotic capsules , or in making it from scratch , 2 capsules of probiotic , plus the culture . This ensures there's a healthier gut biome , than without it , and it shows on exiting , along with a reduced aroma .

I mean I guess if you think most cheeses smell bad then you might think kefir smells bad. But really I mean we eat worse tasting things all the time.
Update:
So I make mine now. And it fluctuates. Depending on temperatures and how long it's been fermenting the smell and taste change. Obviously this doesn't apply to lifeway or other commercial product.

Please do not mention yogurt in the same breath as kefir. Yes yogurt does contain probiotics but not all. Where I live I can on,y find 2 brands of yogurts with probiotics, the rest do not, Total yogurt does. Unless yogurt is Live Yogurt, eat it for culinary reasons 🇬🇧

Try make pancakes with Kefir milk. Its heavenly 🙂 im a dairyfarmer so i got plenty of acess to raw delicious milk
Edit: we usually pick wild blueberries and wild cloudberris that we use on the pancakes along with some sugar.

Just wanted to add in regards to amount of probiotic strains in kefir: store bought kefir is most likely made from kefir starter, which is not kefir grains. It's made in a lab and can create kefir, but does not have nearly as many probiotics. Homemade kefir on the other hand has much more (as mentioned) because it's made from grains. Important to note.

I've been making kefir for about 15 years and I have to applaud your video skills and thank you for sharing this. This is the best,most informative video I've ever seen on kefir and you do everything very well. On a side note I can tell you know what you're talking about from the beginning just because you can pronounce the stuff. You don't know how many times I've been corrected by someone thinking my "kuh-feer" should "kee-fuhr" which makes me giggle. "keh-feer" is cool too. :)

Your video is perfect. Three years ago I started making my own kefir and was only given a 5 minute tutorial on what to do. So to YouTube I went. Your video was about the 5th or 6th one I watched and I remember thinking, "Thank God! Finally someone with a video that is easy to understand."
This last summer my grains took off like crazy and I ended up with almost a half gallon of grains. Yikes! Posted them on Craigslist for free and have been giving away grains to 1 - 2 people a week ever since. They are all newbies like I was and after a 20 minutes lesson, I refer them to your video for a refresher and more detailed information.
Thank you taking the time to make this video. You are my hero.

If you heat the raw milk to 88 degrees and then mix in room temp grains it will ferment much faster. 5-12 hours. You can get raw milk in all states, some is just sold for pets only. It’s still fine. I get it straight from the farm and it’s labeled for pets only. It’s delicious.

At one time, I was using raw goat milk, which worked very well. I don't remember it having that distinctive flavor that goat cheese has, though.
I've also used the grains to make apple cider and bread. For bread, I'd use the yeast from the bottom of the cider bottle. Once I've used some grains outside of milk, I wouldn't use them with milk again.

Well done video!! I too believe kefir has saved me from life with crohns. I store bought dairy kefir.. which is good but expensive. Then i found out about water kefir and have been making that for about 6 months. I absolutely love it. But am now ready to take on both water kefir and dairy. My whole family loves it. And has done wonders for everyone

I use light milk. Works brilliantly, as l did not want full fat milk. Once the grains had multiplied (using full fat milk) l then started using light milk. Perfect.

I have watched many Kefir Videos. This is probably the best one I have seen. You did a great job of not only explaining all of the important facts about Kefir but you did a great job of showing how to make homemade Kefir. The only thing I think that was left out was the history of Kefir. But besides that, this was an awesome awesome video.

I'm waiting for this to come through my mail and am excited to try it out to see if it fixes some stomach problems my family and friends have. I hear people saying it taste great, but it looks delicious like cottage cheese and sour yogurt to me lol. I am kind of scared of doing it wrong and it gets dirty and contaminated somehow though....or not taking care of my milk rotting. I'm also doing low carb ketogenic life so this might be a bit of a challenge for me. Do you have any advice for me on this?

Lovely concise informative presentation my dear! I just received my grains and started my first batch of Kefir. Im trying to make homemade kefir ice cream without an ice cream making machine.
For other homemade ice-creams this can be done with sweetened condensed; dairy/coconut milk . . . , whipped cream and alcohol.
Have you ever heard of sweetened condensed kefir being made?
Does Kefir have a seperable cream that can be whipped to make such an ice cream?
Any help you could give would be greatly appreciated

It's going to be very challenging for me to find a source of raw milk. In other videos, others have instructed to heat the milk up to certain temperatures. If I use just good quality organic whole milk, do I need to heat it up or just the same process as the raw milk? Great video by the way. I can't wait to make my first batch

Hello, I have been making my kefir according to these instructions for three months now, and it works great! We also prefer to double ferment. The only issue we've encountered was when there was a significant drop in our temps (outside) our kefir took longer than 24hrs to ferment & we had to find a warmer spot for them in our pantry, now our grains are happily producing kefir again every 24hrs. THANKS Tara!

Great video. In Europe we call it Keefir ( the emphasis being on the ee part of the word. But hey that it really important. One issue I’ve been having lately is gas forming in the stored kefir in the fridge. It’s great the day I remove it from the grains & put it in the fridge, but after a couple of days it’s almost like drinking a carbonated drink. I’m not sure what I’m doing wrong. I’m using non homogenised grass fed milk from Jersey cows.

Wow. First of all great video, and thank you. Second, apparently I've been saying kefir wrong for several years, like KEE-fer, like Keefer Southerland lol.
Then I clicked this video to brush up on my skills bc I've been out of the game for a bit. And right out of the gate KEFF-fear sound totally foreign to me for obvious reasons, so i looked it up and apparently it is actually kuh-FEAR.

This is an awesome video! Congratulations on such a thorough job of explaining and the high quality picture and sound. (I just posted my own video about making kefir, but if I had seen yours first I never would have done it!) Just for the record, I thought I would add two observations. One is that the milk I use is ultra pasteurized (in tetrabrik) and it still makes great kefir. The second one is that when I have too many kefir grains, I separate some of them out and rinse them well with water, then leave them to dry at room temperature, spread out on a plate from time to time, turning occasionally. When they are completely dry (at this point they are much smaller, hard, and yellow), I store them in a jar in the pantry. I think their shelf life in this state is indefinite. You can rehydrate them with water (12 hours), then milk (24-48 hrs.), when you need them.
Also, a question for you. What is the purpose of leaving the lid unscrewed on the jar? Mine is always tightly closed and I've never had a problem. Thanks in advance for your thoughts.

@Tara, I started drinking Kefir over a year ago. Kefir has helped me overcome Hypothyroidism, and stay cancer free. I LOVE IT SO MUCH! I have not taken any medications of any kind since January 1, 2016. Now, one year later, I am sharing Kefir grains with friends and family as well as teaching people how to make cultured/fermented foods.

Be careful with raw milk (unprocessed milk straight from dairy farm) you drink whole litre and hopefully you're next or close to toilet. Do try it and find out like me.

I do my second fermentation in the fridge, it changes the taste and texture. It gets nice and viscous. I use a metal strainer because its easier to clean. Its stainless which is non-reactive. Stainless doesn't ionize in the presence of acids. In addition, I rinse my grains with tap water every so often because I accumulate gummy curd. I use the same jar over and over like you, but I wipe the mouth to prevent contamination. I like to add some kefir to the next batch to jump start it because I like mine extra sour.
I've had my grains for about 3 years. And I'm drinking some now! I like mine so tart it stings my tongue a little.

Thanks for a great video! Just a few questions: How can you be sure the milk isn’t spoiling if you aren’t refrigerating it? Can you refrigerate during fermentation if you’re willing to wait longer? How long is the kefir safe to drink after fermentation? (since it smells sour, anyway, smell might not be a good guide.) How many times can you reuse the same kefir grains? Great vid hon! I did a video on making kefir myself, as I have been making it for a while now. My grandmother ALWAYS had it! . Being from the Balkans, this is an age old recipe we've been consuming for thousands of years, and I am SO glad it is catching on in the western world.
However, I have a question for you. I now live in the Mediterranean (Malta to be exact), and the summers are VERY hot! I usually leave my kefir out to ferment, and every 24 hours, drain, and get my kefir. I am doing 2 batches at once right now. But recently, due to the heat, as you know, it ferments MUCH quicker and starts to separate earlier than normal. So, I am finding myself putting them in the fridge half way through. It still tastes great, but I think it's double fermenting before it's time, as I get a lot of whey now. So...my questions is - should I separate them AGAIN (4 batches), or is me putting them in the fridge before 24 hours ok? Also, I am not always able to do that if I have to work! What do you suggest?

Great video about making kefir. One thing I wanted to add though.....All milk bought from the store is free from antibiotics. Milk gets tested multiple times before getting to the milk plant. Milk from a dairy get put down the drain if there is a trace of antibiotics.

A good tip that I just discovered making my first batches of kefir. If the temperature in the room where you are making it is lower than between 22 and 27 degrees celcius, take a table lamp with one of the older style filament globes in it and leave it on right next to the jar with the kefir in it. My lamp can be bent to aim the warmth from the globe directly (About 5 inches away) onto the jar. I have found that when I do this with a thermometer on top of the jar, the temperature in the jar remains at a constant 25 degrees celsius. I cover the jar with a black cloth just in case the light can harm the growing kefir, however, when I first used the lamp I did not use the cloth and the kefir was just fine.

Thanks for your instructional video. I was wondering if you can answer this question. Years ago, I got a very old recipe book that showed you how to make cultured sour milk using 1C whole milk and 2T buttermilk. You mixed it together and left it on the counter for 24hours to thicken it. Tasted great and I'd use it in recipes instead of yogurt. OK so, I just started making Kefir using Milk Kefir grains and, it too takes 24 hours and it tastes just like the Cultured sour milk product I used to make. How do I know I'm making Kefir (with it's many probiotics) and not just cultured sour milk? You mentioned how you know it's ready that, one sign is that it would be "stinky" so, I'm wondering, is it that yeasty smell that would tell me it's Kefir and not just cultured sour milk? Also, the grains have been multiplying like crazy so, is that another indication it's Kefir and not just cultured sour milk. Yeah, I'm a newbie so, please be gentle heh.

I have been trying to grow my grains and it has taken 4 tries already and has really not been as simple as I would of hoped in the beginning. My father in law is an expert at it so far and is doing so so good on it, but this particular Kefir grains that I received may or may not be dormant. Still trying to make them grow and hoping I will soon be able to see mine turn out like yours!

I would recommend a silicone spatula vs a wooden one; wooden can have pockets of bacteria in it if it's not completely dry. Also silicone scrapes cleaner. Other than that; perfect vid.

Hi Tara, thank you for your informative video! Just a few questions:
1. Do you tighten the lid when you do double fermentation?
2. When you put it in the fridge, do you tighten the lid? And when you change out the milk, the milk strained out, are those considered Kefir Milk as per usual process as well or do you throw it out?

Im trying to make homemade kefir ice cream without an ice cream making machine.
For other homemade ice-creams this can be done with sweetened condensed; dairy/coconut milk . . . , whipped cream and alcohol.
Have you ever heard of sweetened condensed kefir being made?
Does Kefir have a seperable cream that can be whipped to make such an ice cream?

I really liked your video :) I tried making kefir last week, and started feeling even sicker with typical Crohn's symptoms. I am wondering if the grains were not fully activated and, thus couldn't ferment the lactose, (I got the grains from cultures for health) but the grains weren't growing very well after a few weeks. Anyways I am wondering if the left over lactose made me sick, as I ended up vomitting today even though I hadn't had kefir for about four days. I got new already activated undehydrated grains from another supplier rated 5 stars. I am worried to try kefir again, although I am not completely sure if this is what caused me to get sick. And I am somewhat desperate as a college student, who restarted on Humara today...I had thought that since the lactobacillus was still present in the raw milk, the lactose enzymes would help in digesting the lactose, but am feeling really perplexed. Thanks :)

Davina Theriaque, (not sure why I have no reply option for you) but to answer your question, I said "leech" metals. It's sometimes believed that the kefir will pull metal from utensils or bowls into the beverage. This has been debated among experts so some choose to use plastic or mesh strainers.

I just LOVE you! Your personality shines through in your video. I am an Integrative Nutrition Health Coach and teach cooking classes. Apparently, I have been mispronouncing kefir for a very long time. Thanks for teaching me the right way to pronounce it, haha! I have a question about using the kefir grains with raw milk. Kefir yeast buds are washed in the sink with a non-metal strainer with not very large holes.
It is gently dropped into a plastic, porcelain or glass jar. The more kefir we get, the more milk is added.
My kefir has always had a hold, even if it was bought in the open, boiled and cooled, at room temperature, or pasteurized milk that just came out of the fridge.
Leave it in a dark, room-temperature place (no need to wrap and wrap like yogurt)
After 24 hours, your kefir is ready. If you wait too much, it gets sour.
Since we will use the kefir yeast buds again, we filter them, if you are not available, put them in the fridge with their container, then you can filter them.
Try not to take a break, even if you do it with a glass of milk every day, it tastes great.
Let's say you won't do it for a while;
Put water in a small glass jar and drop the kefir into it. Keep them in the fridge. They can stay alive for months. (But when you start again, it won't taste like you stopped.)
When you do it constantly, it starts to multiply. The first amount you make in 1 month almost doubles.
Distribute the subject to the neighbor, friend and friend, so that his abundance will increase. (I always do that)
You can eat too much kefir.

Do the grains go bad in time? Been doing this for a year now and love it. Thing is over time my days between batches has grow. I have let it set for 3-4, even 5 days with NP other than a slight yellow cast to the surface. I can’t see where leaving it is any different then a double fermentation. Now our grains have a slight yellow cast and our finished product is not as thick - our my grains sick? Covid? 🤒

I use UHT often. Milk is expensive where I am. I use twice to thrice regular non-organic milk, then UHT once. My kefer is doing fine. I treat them organic milk only about once a year. They have been working for over eight years.

Be very careful as these grains quickly interact with other bacterial and mould floating in the air and you can easily end up with something unhealthy or even deadly (even if it looks and tastes good)!!!.
Also you will never get a batch tasting the same as the batches before it due to various factors (type of milk, age of milk, age of the grains, amount of grains, temperature, time of exposure to light......etc)

I'm making this. After spending a fortune on protein powders to try to develop more muscle naturally, it didn't work. But, 3 weeks into making kefir, until I get the curds and whey, ice noticed a big difference in my muscle definition. Apart from that, this stuff is beginning to heal my bad hip and ischial bursitis. Absolutely ridiculously good for you. Please drink this!

Very informative. I just got my kefir grains two weeks ago and have been changing milk (whole milk) every 24 hours. The grains have grown but the kefir is not thick (it still resembles milk consistency). The kefir tastes yeasty, fizzy, and carbonated. I never tasted kefir before so I have no clue if this is what it supposed to taste like. Is it ready to consume? Thanks!

Tara, I was curious how much whey I should have after the second fermentation, should the container be 50/50 or only 25%. Just curious because Im dealing with a bit cooler temps and don't really know how long to let it go through its second fermentation

In Russia in every supermarket one liter of kefir costs less then 1 dollar. The same price as milk.
And 4:58 this is Curd ("Tvorog"). You can mix it with sour cream and add banana, berries, honey or anything else and it will be the best healthy dessert. Very nice for athletes or those who visits gym. Or you can mix it with flour, eggs, sugar, salt and fry small pancakes "syrniki".
And also try "Baked milk" and "Ryazhenka" :)

Excellent guide to kefir. A friend at work gave me some kefir, stored in milk at fridge temperature. To start from here, am I right in saying take it out of the fridge for 24 hours to ferment, strain it, and put the strained kefir back in the fridge to cool? (I can’t drink it at room temperature). I will add this to my smoothies. Then use the strained graines to the same jar and ferment again. I’ve read many guides that start from new grains at room temperature. I’m starting new from fridge temperature milk and grains. Many thanks for this. (I love the perpetual nature of kefir that draws me to the wonderful nature of the kefir making process).

Tip: when double fermenting you should shake the jar (close lid when doing this) a couple of times during process to prevent the colonization of yeast and bacteria. You'll know if this has happened if the top of your kefir looks fuzzy. throw it out if this has happened and the grains.

You have helped me overcome all my fears about making this. I've used your method for months! So easy! Once it totally separated so I just strained it and it made the best cheese! But never need to buy separate grains. I got my kefir at Aldi. Haven't had to buy any new. Thank you for this super simple process! But I don't tighten the cap during fermentation so the gas can escape.

You can also strain your kefir after first 24 hour resting period and than rest it again for another 24 hours it gives it twice the amount of probiotics and vitamins and a more sour taste

Katie, this looks incredibly easy! I've made homemade yogurt for decades, and it's super easy in my instant pot. Almost bought some starter packets for Kefir but found you here just looking for instructions. I bought some Kefir and whole milk yesterday, so i'm ready to do this!
But I have 2 questions. Do you use your milk and kefir straight out of the fridge to make a batch? Should the container that's incubating be left in the dark or doesn't it matter?
I'm a little surprised that this works without super pasteurizing the milk first to get rid of unwanted bacteria. So, if it works for me, voila!

Wow - it worked! I went the other way by leaving some behind in the kefir bottle and filled it with milk. Left it out overnight and tried it this evening and Yum its thick and has that fizziness - thanks for the video

This is fantastic. The price of the plain kefir has risen and there are limits on them. I have gut issues that require kefir daily, and would much rather make a gallon and buy one quart than buy 4 quarts. 12$ vs a gallon of whole milk and one 3 $ quart? Easy math- and it only takes a little experimenting with how much to use. I'm very grateful, will be making this!

made this and it turned out so creamy and thick. I also make my buttermilk this way. Add 1 cup purchased buttermilk, with 2 bags of 3.25% milk. I use glass jar and brown tupperware juice jug. Leave for 24 hours. Then when it is done I whip with stick blender until large bubbles form. Then I refrigerate it. I did the same with the kefir also. So so good.

It works better if you boil the milk, let it cool down so it's warm to touch, add the Kifer, and place in a warm place overnight (maybe inside an oven which has been warmed up). No stirring or peeking.

75 to 85 degrees Fahrenheit is perfect room temperature to start the process. in winter I warm the milk to 135 to 150 F before adding the Kefir it cuts the time in half. Never boil the milk just warm it up to speed up the fermentation process. and 100% grass feed milk makes the best tasting and organic whole works great, no separation when I use these 2 milks just creamy kefir

THANKYOU!! NOBODY, BUT NOBODY can tell me HOW the VERY FIRST KEFIR "GRAINS" were "invented. NOBODY! They only say you need a starter of the grains. But these grains HAD to have a very first creation point, the VERY FIRST meaning that until then, THEY DID NOT EXIST! But so glad you have the alternative to that question. THANKYOU!❤

I KNEW it!!!! It's just like kombucha. Sure you can get starter liquid and a scoby from a friend but you can also start your first 2 gallon batch (max per bottle of gt's) with the plain gt's kombucha as starter liquid and it will grow its own scoby provided it's left undisturbed throughout fermentation
Edit/ update....so this video inspired me to go get some. Can't wait to make it for myself and for those who haven't tried it: it's absolutely delicious. The store bought doesn't taste as strong as buttermilk but i would not mind a stronger flavor. If youre like me and you like dairy, whole milk, sour cream, el salvadorian or mexican cream, buttermilk, yogurt, greek yogurt, gogurt drink.......there is no way youre not gonna like it.

Just wondering if nutrition-wise it would be as beneficial in terms of units of probiotics without grains to ferment the milk. I get that the milk gets thicker and tangy so it tastes and looks like fermented milk but is it equal to milk fermented in benefits?

You can only do this a few times, after that it will stop working if you don't use grains. To use a bit of the old one to make the new one works for yogurt, but not kefir.

Why doesn’t this method grow Kefir grains? @Katie Moore, it wouldn’t surprise me if this is more of a yogurt you end up with rather than real kefir. Have you had your “kefir” analyzed by a lab and determine the probiotic and vitamin content?

@Katie Moore, 1st Thanks a lot! 2nd, So, you're saying to leave it UNREFRIGERATED on the counter for 24-72 hours? (its October now; the A/C is off, also the furnace. It's average 67F outside in the daytime, and 43 at night, and 64-72 degrees in the house.)

Much easier to just purchase kefir grains and make kefir forever as long as you keep the grains healthy. The store bought does not have the amount of probiotic strains. Store bought is not made the same as kefir made from the grains. Plus you have to keep buying the store bought kefir to culture you milk.

I show How To Make Milk Kefir without kefir grains at your own home in this video. Making kefir can be easy and you will need just simple products available in every store and basic kitchen tools. Milk Kefir is a fermented homemade healthy drink loaded with probiotic cultures and made with some sort of starter. Some people claim that fermented foods are great for a weight loss (because it helps restoring beneficial gut bacteria and helps fighting candida that is linked to many issues and among them obesity). I personally can't confirm that and I drink it "only" for health benefits and really unusual (but great) taste.
Today you can buy bottle of milk keffir in almost every single grocery store. There is just one problem. Most of kefir that they sell is just junk and you are much better off making it yourself. Kefir producers claim on their bottles that there are billions active probiotics in their product but this statement is false in most of the cases. For example some kefirs were pasteurized after creation and before shipping to the store. What sense does it make?! So you are actually paying for dead (or close to dying) bacteria that will not do anything for you. Why to waste money for those crappy and low quality kefir-like drinks. It is better to have it under control and make it at home.
If you want to make milk kefir from scratch you will need whole fat organic milk and whole fat organic kefir (this kefir will be our starter and it will be used instead of kefir grains). I tried many different organic companies to make homemade kefir milk and sometimes I found out that my kefir didn't start to ferment for whatever reason. Something was fishy with milk or kefir. When I use those particular products that you can see in this video it always come out perfectly and it wasn't always the case with other products. I used Whole Fat Milk by Super Natural and Whole Milk Organic Kefir By Wallaby (BTW: THIS VIDEO WASN'T SPONSORED IN ANY WAY BY THOSE CORPORATIONS). My point is that you should not try to save money when buying supplies for homemade kefir. Low quality milk may spoil your kefir and all your efforts will be wasted.
Step by step instructions:
1) Purchase whole fat milk and whole fat kefir (high quality products please).
2) Bring milk to 90 F / 32 C in a big pot. If you don't have a kitchen thermometer you can use your finger to feel the temperature - when it is nice and warm BUT comfortable and ABSOLUTELLY NOT hot then the temperature is about right. Please be extra careful to not burn your skin so check temperature with this method often.
3) Add 1 cup of kefir to the milk and stir it well.
4) Cover it with a linen fabric at set aside in a nice and warm place OR use oven method : if you have an oven that allows to set very low temperature to just keep something warm use this option and you will get exactly same results as I achieved after 2 days in about 12 hours.

The milk does NOT need to be heated! Just add store-bought kefir to room temperature milk. I make kefir every day from whole store-bought milk and save the resulting grains to continue the process. Raw milk makes even better kefir.

You can extend any culture this way.. and what you get from this process is limited propagation of beneficial yeast. Also keep in mind that many companies stabilize their kefir with various compounds and specific heat treating; though they list many bacteria, you have no way of knowing which ones survived their process.
If you can get your hands on raw, whole milk, making kefir is easier.

I do this but adding several tablespoons of sour cream(without gums) to room temperature milk. Cover with cloth and leave for 24 to 48 hours. If you use sour cream with gums the milk will be slimy and bitter. Taste after 24 hours to see if thick and sour. If not sour after 24 hours leave for another 24 hours. At the end of 48 hours put in refrigerator overnight. Next day it is done. We call this sour milk (zsiadle melko in Polish).

Sadly, this may not be, and most likely is not true Kefir. Many store bought bottle of Kefir have never been touched by Kefir grains, but rather had powdered probiotics added to them. Yes, they are higher than yogurt in probiotics, but nowhere as beneficial as true Kefir made using Kefir grains. Look at the bottles and ensure the language states that the contents were made using Kefir grains. Better yet, if they list the bacterial strains, at around 12 or so . . . they weren’t made using Kefir grains, and really shouldn’t be called Kefir.

All big scale produced Kefir in dairies is made this way. It is called the Russian method in scientific literature. No it is not yogurt! Yogurt is anaerobic process done with other strains of MO.

I love that "milk skim." In Spanish speaking countries it's called nata. They use it for flavoring in ice cream and other foods. I know a lot of gabachos have some kind of revulsion to it; they probably never tasted it. Yum.

So you did not let the milk cool at all... Very neat recipe. I have the grains, but I don't like the flavor nor the thinness of it so far. I preferred the results I got from powdered kefir, again heating the milk. For some reason, when using kefir grains, you don't have to cook the milk. Which is easier, but I don't get the custardy sweeter kefir either.

Question for you when the milk and keifir has stood for a couple of days following your recipe and IF the Kefir drink does its job, WILL there be Kefir grains left over if you strain the mix. I make it same way. The only, I put a couple full spoons of plain yogurt in it. I keep in under blanket for 24 hours and get the exact same thing. I'm not sure if it's the exactly a Kefir, but it tastes great and easy to make.

Grass fed, whole milk. Bought a bottle of organic plain keefer-
Drank half and put just 2 percent
Milk in it because that all I had on hand, and in 24 hours it was great.
Repeated , I drank half than added
Organic, grass fed whole milk and sure it great.i used the bottle from the baught kefir, so far so good ---
But not sure about getting grains.
Am leaving the last batch 3 days.
Will see what happens then.

When you warm up the Milk, it builds a thin Film over it, which should not be removed because the Grains are made of this thin Film when left alone.

I made an incubator (for natto) by using an coffee cup warmer on which I put a glass jar that has pre-heated boiling water. Over the glass jar, I put a metal coffee can to serve as heating element for the natto (the water helps keep temperature constant on the tin can). The plastic container that has the natto is placed on the upside down can (which itself covers the boiling water) I then cover the two with an upside down thermos jug (which is normally used to dispense cold drinks in summer).
I may just try your method to make kefir using my improvised incubator.

The first step is unnecessary. Just combine the two and leave it in a warm place for 24-36 hrs. I actually use a pint jar, fill it 2/3 with milk and 1/3 kefir, and then pour the remaining kefir straight into the milk jug. Then I put both the jar and the milk jug on top of my refrigerator and leave it for a day. It's that simple.

Does anyone know if it is possible to make kefir for dogs using raw goat milk and a species specific probiotic powder supplement?
And, will I eventually get kefir grains that I can reuse or will I need to always use the probiotic powder supplement?

Just what I wanted to know.
My mum used to make extra pot of yogurt with left over yogurt using same technique cover the pot with blanket in a warm room.
Two days later Walla!! 4 liters of yogurt.
Kifir in my local cost 7.50 lt😕 .. it's time i start making my self. I've seen some grass fed organic milk i need to buy.

Thank you!! I just wasted 4 litres of milk and a bottle of kefir because I tried twice; another video maker failed to tell us that we don't have to warm up the milk! I'll try your method. Do you know if I can use a yogurt maker for this? My house is pretty cold when I'm at work because I don't turn the heater on. Also, in my country it's not allowed to sell unpasteurised milk. All milk must be pasteurised or worse, sterilised.

Kefir doesn't need warmer temperatures to reproduce. It is produced at room temperature. That means, that what we are getting as "kefir" in the stores, is actually yogurth, which indeed need that warmness in order to be made. I don't know if all of them. I didn't do that research.

I'll try it. If the only reason it's heated is for making sure the milk bacteria is gone, then we don't have to worry as all milk in the USA is pasteurized and homogenized. I would expect that you could make kefir from this method, because if you add yogurt to milk , then warm it for a while , you make yogurt. I don't believe that you would get yogurt if you added kefir to milk. it's not the same you see.

I always like to watch spanish and english videos when i look for info about something, just to get the best info i can get for exemplo the kefir right now.... and for some reason the people in united states have some kind of healthy food knowlede or degree when they talk about healthy food like the kefir, is like not everybody knows about all that healthy food... but in mexico cosuming all that good stuff is something normal for most of the people i havent been in other countrys but it seems like they have some kind of knowlegde in healthy food too... it surprises me

I don't believe most store-bought brands of "kefir" are real kefir--apparently they lack the yeasts found in kefir grains--and so you will never be able to make a good quality kefir using this process, nor will grains ever be produced. We have the brand from the video in my area and it is much closer to yogurt than actua
